We grew hundreds of pumpkins at Saxon Court for our rooftop Pumpkin Festival. We didn't want to waste the pumpkins so we invited Saf's Kitchen, Punjabi Street Food, and Indian Fusion Creator to show us how to make an Indian Spiced Pumpkin and Lentil Soup.
Indian Spiced Pumpkin and Lentil Soup
Sunflower Oil
2 Onions
2 Bay Leaves
1 Black Cardamon Pod
1 Star Anise
1 tsp Garlic 1 tsp Ginger
3kg Pumpkins Cubed
500g Sweet Potato
1 tsp Madras Curry Powder
1/2 tsp Red Chilli Powder
1/2 tsp Turmeric
1/2 tsp Salt
500g Pre-soaked Red Lentils
1 litre Vegetable Stock
Half Bunch Coriander
1 tsp Garam Masala Powder
200ml Double Cream
